Chocolate Peppermint Crinkle Vegan Christmas Cookies

The chocolate peppermint cookies are a delicious gem that will light up your Christmas with their addictive taste. Here is the recipe: –

You Will Need: –

Oil – This recipe preferably uses avacado oil.

It provides the desired texture without giving in any unwanted flavor.

But if you want alternatives to canola oil, use avocado or coconut oil.

You can also consider using olive oil although, it might add a slight flavor.

  • 1 Tsp. Vanilla Extract
  • 1 Tsp. Peppermint Extract
  • ½ Tsp. Salt
  • 2½ Tsp. Baking Powder
  • 1 Cup Cocoa Powder
  • 2 Cups All Purpose Flour
  • ¾ Cup Apple Sauce
  • 2 Cups Granulated and Powdered Sugar
  • ½ Cup Avacado Oil
  • 1 Tbsp. Crushed Peppermint Candies (Optional)

Directions

  1. Combine salt, all-purpose flour, and baking powder in a bowl.
  2. Take another bowl and add cocoa powder, oil, extracts, peppermint candies, sugar, and applesauce. Blend both mixtures. Now start adding the wet mixture to the dry one slowly. Keep mixing side by side. Make sure there are no lumps.
  3. Once the dough is ready, just wrap it in plastic wrap and freeze it for about two hours. This will set the dough as otherwise, it will be too soft, making it hard to handle. You can check every 30-40 minutes to see if the dough is hard enough to shape.
  4. Now comes the baking part. After your dough is chilled, roll it into balls the size of a tablespoon. Use a cookie scoop to get the dough out for every cookie if you like.
  5. After that, coat the cookies in granulated sugar first and then in powdered sugar. Place them on the baking sheet.
  6. Bake the cookies for up to 12 minutes to get a crispy layer on the outside. It will help you give a chewy and fudgy taste from the inside while maintaining the crispiness from the outside.

Some Tips and Tricks

  • Don’t worry if you aren’t able to get peppermint candy. The peppermint extract will also do the work of providing the delicious flavor of peppermint to your vegan Christmas cookies.
  • If you add vegan white chocolate chips to your cookie dough, the taste will become ten times better.
  • Do not forget to chill the dough.
  • To get the perfect crinkled cookie, we would recommend first coating the cookie in granulated sugar. It will dry out the cookie before it gets set in the interior.

Gluten-Free Gingerbread Vegan Christmas Cookies

The flavor of freshly grated ginger with a wonderful sweet taste, a bit of spiciness, and chewiness are just what you need in vegan Christmas cookies this season.

The best part? It is gluten-free! So, here is the recipe:

You will need: –

  • 3 tbsp. water
  • 1 tsp. ground nutmeg
  • 1 tsp. ground ginger
  • 2 cups almond flour
  • 1 tbsp. Ground flax seeds
  • ¼ tsp. salt
  • 1 tsp. cinnamon
  • ¼ cup molasses
  • 1 teaspoon baking soda
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla
  • 1 tablespoon freshly grated ginger
  • ½ cup gluten-free flour blend
  • ¼ tsp. ground cloves
  • ½ cup softened coconut oil
  • ½ cup coconut sugar

Directions

  1. Combine three tablespoons of water and flax seeds in a bowl and let the mixture sit for a few minutes until it thickens.
  2. In a medium-sized bowl, add nutmeg, cinnamon, gluten-free flour blend, almond flour, cloves, baking soda, ground ginger, and salt. Whisk well to combine the dry ingredients.
  3. Now take a large bowl. Add coconut oil, molasses, coconut sugar, vanilla, and flax mixture. Mix well.
  4. Slowly add the dry mix to the wet mixture. Combine slowly so that the ingredients are incorporated well into each other.
  5. Knead the mixture into a dough. Keep the dough in the refrigerator for about 30-40 minutes.
  6. Line the cookie sheets with parchment paper.
  7. Make small bowls of the size of a tablespoon (or whatever size seems fine to you). Start with scooping small amounts and rolling them into balls.
  8. Now surround the cookies with the granulated sugar and place them on the cookie sheet. Keep the cookie sheet in the freezer for another twenty minutes. It is a crucial step as it gives the cookies a crackly top.
  9. In the meantime, preheat the oven to 350C.
  10. When the cookies are ready to take out from the fridge, bake them for ten minutes in the oven.
  11. Let the cookies cool on the tray. When hot, the cookies will be soft but firm up as they get to room temperature.

Some Tips and Tricks

  • Make sure your coconut oil is not in a liquid state. It has to be softened. So, if it is completely melted, put it in the refrigerator for some time until it thickens.
  • Remember, gluten-free flour blend is used in different ratios compared to its substitutes.
  • Do not use coconut flour.
  • To make the cookies more special and add more love, you can add dark chocolate chips after combining the wet and dry mixtures.

Oatmeal Chocolate Chip Vegan Christmas Cookies

This oatmeal chocolate vegan Christmas cookie is made of all the good ingredients like oatmeal and chocolate chips. And we can say this cookie recipe is one of the best vegan Christmas cookies.

You will need: –

  • ½ cup brown sugar, ½ cup white sugar – This vegan Christmas cookie recipe requires a combination of brown sugar and granulated sugar. You can go for any light, dark, or homemade brown sugar.
  • 2 Tbsp. Vanilla Extract – Vanilla adds a beautiful flavor to the cookies. But it is an optional ingredient. You can omit it if it isn’t available.
  • ¾ Cup Vegan Butter – You can get vegan butter(please hyperlink the vegan butter blog here) from the supermarkets or can opt for a homemade one.
  • 1 ¼ Cups All Purpose Flour – All-purpose flour or whole wheat pastry flour are good for the cookies. You can also use gluten-free flour if you are making vegan + gluten-free cookies.
  • 1 Tsp. Cinnamon
  • ½ cup Vegan Chocolate Chips
  • 1 Cup Rolled Oats
  • ¾ Tsp. Baking Soda
  • ¼ Tsp. Salt

Instructions

  1. Preheat your oven to about 350-360F and grease your baking pan lightly.
  2. Take a bowl and combine all the dry ingredients.
  3. Take another medium-sized bowl. Add in all the wet ingredients. Use a whisker or batter to blend the vegan butter and sugar to form a creamy consistency.
  4. Mix all the dry and wet ingredients. There should be no lumps. Different vegan butter has varied moisture contents. So, if you feel the dough to be a bit dry, add tablespoons of water into the mixture until you get/achieve the right consistency of the dough. The right consistency is when the dough holds together.
  5. When the dough is ready, add in the chocolate chips.

Fun Fact – You can even eat the cookie dough; it is delicious.

  1. Roll the cookies into a ball using about two tablespoons of the dough and place them on the baking sheet you greased earlier. Use all the dough to form as many cookies as you can.
  2. Bake for 14 – 18 minutes. By this time, the cookies will spread on the baking sheet and might still look raw. But don’t worry. Just make sure that they are golden on their undersides. Now, let the cookies cool and give them time to set.

Some Tips and Tricks

  • Old-fashioned rolled oats are the best oats for the oatmeal vegan Christmas cookies. They provide a nutty and chewy texture that adds an awesome flavor to your cookies.
  • Do not overbake your cookies. The cookies will look raw when they are right out of the oven. It is the secret to chewy cookies and exactly what you want. When the underside of the cookies is brown, you know your cookies are ready.
  • You can even freeze the cookie balls in the freezer or even the baked cookies. While baking the frozen dough, bake them for an additional two or three minutes.

Vegan Christmas Cookies Storage

You can store all of the aforementioned vegan Christmas cookies for about 3-5 days in an air-tight container at room temperature.
