Directions

  • Combine salt, all-purpose flour, and baking powder in a bowl. 
  • Take another bowl and add cocoa powder, oil, extracts, peppermint candies, sugar, and applesauce. Blend both mixtures. Now start adding the wet mixture to the dry one slowly. Keep mixing side by side. Make sure there are no lumps.
  • Once the dough is ready, just wrap it in plastic wrap and freeze it for about two hours. This will set the dough as otherwise, it will be too soft, making it hard to handle. You can check every 30-40 minutes to see if the dough is hard enough to shape.
  • Now comes the baking part. After your dough is chilled, roll it into balls the size of a tablespoon. Use a cookie scoop to get the dough out for every cookie if you like.

  • 3 tbsp. water
  • 1 tsp. ground nutmeg

  • ¼ cup molasses
  • 1 teaspoon baking soda

Directions

  • Combine three tablespoons of water and flax seeds in a bowl and let the mixture sit for a few minutes until it thickens.
  • In a medium-sized bowl, add nutmeg, cinnamon, gluten-free flour blend, almond flour, cloves, baking soda, ground ginger, and salt. Whisk well to combine the dry ingredients.
  • Now take a large bowl. Add coconut oil, molasses, coconut sugar, vanilla, and flax mixture. Mix well.
  • Slowly add the dry mix to the wet mixture. Combine slowly so that the ingredients are incorporated well into each other.
  • Knead the mixture into a dough. Keep the dough in the refrigerator for about 30-40 minutes.
  • Line the cookie sheets with parchment paper.
  • Make small bowls of the size of a tablespoon (or whatever size seems fine to you). Start with scooping small amounts and rolling them into balls.

  • ½ cup Vegan Chocolate Chips  
  • 1 Cup Rolled Oats
  • ¾ Tsp. Baking Soda
  • ¼ Tsp. Salt

Instructions

  • Preheat your oven to about 350-360F and grease your baking pan lightly.
  • Take a bowl and combine all the dry ingredients.
  • Take another medium-sized bowl. Add in all the wet ingredients. Use a whisker or batter to blend the vegan butter and sugar to form a creamy consistency.
  • Mix all the dry and wet ingredients. There should be no lumps. Different vegan butter has varied moisture contents. So, if you feel the dough to be a bit dry, add tablespoons of water into the mixture until you get/achieve the right consistency of the dough. The right consistency is when the dough holds together.
  • When the dough is ready, add in the chocolate chips.

Fun Fact – You can even eat the cookie dough; it is delicious.

  1. Roll the cookies into a ball using about two tablespoons of the dough and place them on the baking sheet you greased earlier. Use all the dough to form as many cookies as you can.
