For dough:

  • 1 ½ cups of warm water
  • 1 tbsp. brown sugar

For toppings:

Instructions:

To make the dough:

  1. Mix the water, sugar, and yeast in a large bowl. Put a clean cloth to cover the bowl and leave it for about 10 minutes. The mixture should be foamy. If it is not foamy, the yeast might be too old, so purchase a new yeast.
  2. Add the flour and salt, then mix them to make a shaggy dough.
  3. Knead the dough on a clean surface. The dough may be too harsh for the mixer, so you must knead it by hand to be smooth.
  4. Grease a large bowl, then place the dough. The dough must be evenly coated with oil. Cover the bowl with a clean dish towel.

To cooks the bagels:

  1. Preheat the oven to 425°F.
  2. Put parchment paper on the baking sheet.
  3. Wait until the dough has risen and punch it down. For standard-sized bagels, you can cut the dough into ten pieces. To shape the bagel, form a bit of dough into a ball, and poke a hole in the center with your fingers. Spread them on the baking sheet afterward.
  4. Now it’s time to boil the bagels. Add 8 cups of water and the brown sugar to a large pot to do this. Once the pot is boiling, add 1 bagel and boil for 1 minute. Use a spatula to flip the bagels. Remove the bagels from the water and put them back onto the baking sheets. Do this with the remaining bagels.
  5. Once boiling, use aquafaba to brush the top of the bagels. Sprinkle the bagels with poppy, sesame, and other bagel seasonings.
  6. Bake the bagels until lightly brown. Once baked, remove it from the oven and let it cool. When warm, the bagels are super tender but chewier when they cool down.
  7. You’re now done! Store your newly baked bagels in an air-tight container for up to 4 days. You can also store them in the freezer for up to 4 to 6 months.
